Ingredients: for Chipotle chicken burritos recipe
2KG boneless and skinless chicken thighs
2 tablespoons olive oil
1.5 tablespoons oregano,
1.5 tablespoons cumin,
1.5 tablespoons coriander powder,
1.5 tablespoons garlic powder,
1.5 tablespoons onion powder,
2 tablespoons smoked paprika,
1.5 tablespoons salt
4 chopped garlic cloves
150 grams chipotle in adobo sauce
1/2 squeezed lime
60 grams honey
Ingredients: (Rice)
1/2 chopped onion
4 chopped garlic cloves
1 tablespoon chicken stock powder,
1/2 tablespoon cumin,
1 tablespoon turmeric,
1 tablespoon smoked paprika
30 grams light butter
800 grams cooked basmati rice (approx 250g – 270g dry weight / uncooked)
Coriander leaves / coriander
Burrito Ingredients (10 total)
10 tortillas (Simpson Pantry Low Carb Protein Tortillas – or any low calorie tortillas)
Divide chicken/rice into two equal portions.
30g Sriracha Mayonnaise

Instructions for reheating Chipotle Chicken Burritos:
Place the burritos in a freezer and the day you want to eat take one out of the freezer, remove the foil and microwave for about 2 minutes – doing this helps the burrito thaw and warm through in the middle. Then air fry or oven bake at 190C/375F for about 5 – 8 minutes (time may vary depending on the air fryer/oven)
If you are in a hurry, you can skip this whole process and heat the burrito on a pan over low heat, making sure to turn it every minute or so for about 5–7 minutes to get an even temperature.
Step 1: Marinate and Cook the Chicken
1. In a bowl, whisk together the olive oil, honey, chopped chipotle peppers, smoked paprika, garlic powder, cumin, salt and lime juice.
2. Coat the chicken in the marinade and leave it for at least 15 minutes (or up to 4 hours for a deeper flavor).
3. Heat a large pan over medium-high heat. Cook the chicken (5-7 minutes on each side) until it is lightly browned and cooked through (the internal temperature should be (165°F)).
4. Let it rest for 5 minutes, then shred or chop it.
Step 2: Prepare the Filling
– While the chicken is cooking, warm the black beans in a small pot.
– If you haven’t already cooked rice or quinoa, cook it.
– Chop the veggies and get your burrito station ready!
Step 3: Assemble the Burrito
1. Lay out a tortilla and spoon a spoonful of Greek yogurt in the center.
2. Add a scoop of rice, followed by black beans, followed by chicken.
3. Top with cheese, followed by red onion, lettuce, avocado, and cilantro.
4. Fold in the edges and roll tightly.
Step 4: Toast for Extra Flavor
– Heat a clean pan over medium heat and lightly toast each burrito (1-2 minutes per side) until golden brown and crispy.
