Vegetarian Tacos
These vegetarian tacos are a healthy and delicious meal that is easy to make and packs a ton of nutrients. Roasted sweet potatoes and black beans are the main ingredients in this meal. 2 medium sweet potatoes, peeled and cut into ½-inch cubes
2 tablespoons olive oil
1 teaspoon chili powder
2 teaspoon smoked paprika
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon saltF
or the tacos:
1 (15-ounce) can black beans, drained and rinsed
8-10 small corn or flour tortillas
1 avocado, sliced or shredded
½ cup red cabbage, finely shredded
½ cup fresh cilantro, chopped
For the lime crema:
½ cup sour cream or plain Greek yogurt
Juice of 1 lime
1 tablespoon olive oil
¼ teaspoon garlic powder
Salt to taste
Instructions
Roast the sweet potatoes:
Preheat oven to 425°F (220°C)
Toss the sliced sweet potatoes with olive oil and spices (chili powder, smoked paprika, cumin, garlic powder and salt). Arrange evenly on a baking sheet. Roast for 25-30 minutes, turning occasionally, until they are tender and slightly crispy on the edges. Prepare the lime crema: In a small bowl, whisk together the sour cream (or yogurt), lime juice, olive oil, garlic powder and a pinch of salt. Set aside. Warm the black beans: In a small saucepan, warm the black beans over low heat, seasoning with a pinch of salt and cumin if desired. Warm the tortillas: Warm the tortillas in a dry skillet or over an open flame for about 30 seconds until they are warm and slightly charred. Assemble the tacos: Start by layering the roasted sweet potatoes and black beans on each tortilla. Top with sliced avocado, shredded red cabbage and a drizzle of lime crema. Garnish with fresh cilantro.
