Easy creamy tomato chicken pasta recipes

This high protein pasta recipe is protein-packed and delicious. With tender chicken, a tangy tomato sauce, and high protein pasta, this dish is a great option for fitness enthusiasts or anyone looking for a nutritious and delicious meal.

Seasoned Chicken

– 600g chicken breast (diced into bite size cubes)
– tsp garlic powder
– tsp paprika
– tsp salt
– tsp pepper
– Cooking spray (I used chosen foods avocado oil spray)

Creamy Tomato & Garlic Sauce
– 20ml olive oil
– 8 garlic cloves diced
– 300g cherry tomatoes sliced
– Generous pinch of salt
– 250ml chicken stock (brand: oxo)
– tsp chilli flakes
– tsp paprika
– tsp onion powder
– tsp black pepper
– Add salt to taste
– 100g light cream cheese (brand: Philadelphia lightest)
– 200ml fat free milk
– 30g tomato paste
– tsp sugar
– 60ml pasta water (reserved from cooking pasta)
– Fresh chopped parsley

Other ingredients:
– 280g penne pasta (uncooked weight)
Boiled in generously salted water

Garnish
– grated Parmesan (optional)

How to make High protein pasta chicken recipe:

1. Cook the pasta:
Bring a pot of salted water to a boil and cook the pasta according to the package directions. Drain the water and set it aside.

2. Prepare the chicken:
· Heat 1 tablespoon of olive oil in a large pan over low heat.
· Season the chopped chicken with garlic powder, onion powder, paprika, salt and pepper.
· Cook for 5–7 minutes until lightly browned and cooked through. Remove from pan and set aside.

3. Make the sauce:
· In the same pan, heat 1 tablespoon olive oil and sauté the chopped onion for 2 minutes until soft.
· Add the chopped garlic and cook for 30 seconds.
· Add the chopped tomatoes, Italian seasoning, red pepper flakes, salt and pepper. Let it simmer for 5 minutes.
· Lower the heat and add the Greek yogurt, milk and Parmesan cheese, whisking until smooth and creamy.

4. Bring it all together:
· Add the cooked chicken back to the pan, followed by the drained pasta.

· Mix everything well so that it is coated in the creamy tomato sauce. Let it simmer for 2 minutes.

5. Serve and enjoy:
· Garnish with fresh basil or parsley and additional Parmesan cheese.·
