This soup is great for dinner and lunch. It’s warm and comforting and even better in the rainy season. It’s very easy to make.

Ingredients:-
2 tablespoons extra-virgin olive oil
1 rib celery, chopped (about 1 cup)
1 medium carrot, chopped (about 3/4 cup)
1 clove garlic, crushed
1/4 medium onion, about 1/2 cup
1/4 teaspoon kosher salt
1/3 cup orzo or other small pasta
4 cups low-sodium chicken broth (1-quart box, or 2 cans)
A small handful of fresh parsley leaves, basil or dill, chopped (about 2 tablespoons)
1/2 lemon, juiced (about 1 tablespoon)
Freshly ground black pepper
Serving suggestions: Whole-wheat crackers and cheese sticks.

1 Add olive oil to a pan over low heat and heat it; then add garlic, onion and vegetables.Add salt, and cook until tender, about 6 minutes. Add pasta and cook until lightly toasted and golden, about 2 minutes. Add broth and bring to a boil over high heat. Cover and cook, stirring occasionally, until pasta is tender, about 8 minutes.

2 Add any herbs you or your child likes and a squeeze of lemon. Season with pepper and additional salt to taste. Fill a thermos, have a lunch bag ready and send it to school.

Cook’s Note
This soup freezes well, so freeze leftovers or make a double batch so you have enough. Also, you could add some cooked chicken or meat balls for another meal.
